A daring chocolate bar with umami and natural sea minerals. We get the cocoa beans for this bar from the social cooperative called Kokoa Kamili in Tanzania. The chocolate is handmade through careful roasting and slowly conching. When it is tempered and in the chocolate form, we add wild Nordic sugar seaweed from Kattegat. This gives a natural umami and natural mineral sea salt to this bean-to-bar chocolate.
Handmade in Copenhagen.
Key procedures: Freshly harvested sugar seaweed is sun-dried at Kattegat, ground and added to the tempered chocolate bar.
Cocoa formulation: 70% Trinitario cocoa.
Ingredients: Cocoa beans, cane sugar and wild seaweed.
